Peanut Butter Popcorn

A winter's snow day! Max still had basketball, but we enjoyed some family fun in the snow and some delicious snacks as well--which just seems to go hand in hand with snow days at our house. This is the recipe for peanut butter popcorn. My mom made this for us as kids, and although there are other recipes out there--this one is the BEST and the GOOIEST! I use air popped popcorn as microwave is never as good... One large Tupperware bowl full of popcorn. So easy, and best served warm!
Peanut Butter Popcorn:
(bring to a rolling boil on stove top--I use medium heat)
- 1/2 cup of sugar
- 1/2 cup light corn syrup or honey
(remove from heat)
add the following
- 1/2 cup peanut butter (we like creamy Jiff best)
- 1/2 tsp vanilla (I use a smidge more)
pour over popcorn and stir to coat

Best served after a fun day of playing in the snow~along with a steaming cup of hot coco brimming with marshmallows, of course. This is Frosty. He was created with much love and the occasional outbreak of a few snowball fights ;)...
